For Momos :-<.span>
Barley (jav) flour – 25 gms
Sorghum (Jowar) flour – 25 gms
Baking powder – 1 pinch
Salt – as per taste
Melted ghee – ½ teaspoon
Melted butter – 1 teaspoon
Freshly grated garlic – 2 cloves
Finely chopped spinach – 1 cup
Finely grated homemade cottage cheese – 65 gms

For Roasted Bell pepper and garlic Dip : –
Olive Oil – ½ teaspoon
Sliced bell peppers – 1/3 cup
Sliced tomatoes – 1/3 cup
Roughly sliced garlic – 3 cloves
Salt – as per taste
Red chili powder – ¼ teaspoon

Preparation Method
Momo Dough :
Mix sorghum and barley flours in a bowl. Add salt as per taste. Please keep in mind that stuffing shall contain salt. Add 1 pinch of baking powder and ½ teaspoon melted ghee. Bink the flour with lukewarm water. Knead it properly and cover it with bowl and keep it aside.

Filling :
In a non stick pan take 1 teaspoon melted butter and add freshly grated garlic. Once garlic starts turning brown, add spinach and cook till the water from spinach gets evaporated. Now add the seasoning of salt, pepper and finely grated homemade cottage cheese. Sauté it on low flame till the water evaporates.

Momos :
Roll small puris from the dough. You can grease the rolling board and rolling-pin using a brush . Pour the filling in the puris and seal it. Keep it on the strainer and steam it for 10 mins.
Your gluten free palak paneer momos are ready.

Roasted Bell-pepper Garlic Dip :
In a non-stick pan add ½ teaspoon olive oil and add peppers (Red,Green,Yellow), tomatoes and garlic. Roast it on high flame till the burnt smoking texture is seen. Add the seasoning and blend it in a mixer. Enjoy a very healthy gluten free momos with antioxidant rich smoked peppery dip.

As the momo dough is gluten free this receipe can bring variation in diabetic diet. The flour (Sorghum and Barley) are rich source of calcium, Iron, Protein and fibers. The filling of cottage cheese provides good source of Vitamin D and is also considered as weight loss cheese. Spinach, source of iron and fibers will aid digestive tract to maintain its optimum function of digestion. The roasted bell-peppers, tomatoes and garlic dip is one fine combination which provides body rich source of antioxidants. According to nutritionist the health meter of this recipe is high.
