Low Carbohydrate evening meal recipe

As summers are approaching our lovely vegetables shall hibernate from us until next winters. Let’s utilize whatever veggies are available. Basil is one rich Antibiotic from Mother Nature. Rice (Idly Rice, Jeerasar, Masuri any variants but not basmati) – 1 cup (Soaked overnight)
Fresh grated coconut – 1 cup
Basil Leaves – 1 bunch
Garlic clove – 4 cloves
Lemon Juice – 2 tbsp
Salt – as per taste
Cooked rice – ½ cup for binding
Grated vegetables (cabbage, lauki, carrot) – 1 ½ cupOlive oil – 1 tsp

Preparation Method:

For Pesto Sauce
Wash basil leaves and roughly chop them. Pop the leaves in a blender and add salt, lemon juice and garlic cloves. Add 1 tsp olive oil and blend the pesto till chutney consistency is obtained.

For Cutlet
Wash the overnight soaked rice and pop it in the blender. Add freshly grated coconut and blend till thick dropping consistency batter is obtained. Do not add water and also thoroughly drain the water before blending. Once the batter is ready add all the vegetables and pesto sauce. Please do not add water in pesto dip. If require add lemon and olive oil mixture (1 part olive oil + 1 part fresh lemon juice) Mix everything properly and finally add cooked rice and blend it to make it thick dough. Roll the Cutlet ball and flatten it on a non stick preheated tava. Roast cutlet on tava till golden brown. Do not add excess oil/fat as coconut and olive oil in pesto does the taste enhancement.
