As summers approaching kids n adults favorite potatoes are seasonal vegetables. Well myth “potatoes not good it makes you fat”. Not anymore NDF gives the scientific reasoning why potatoes are considered healthier veggie. Here is the recipe from NDF jacket potato with creamy pesto veggies.

Ingredients for Jacket Potato:
Medium Sized Potato – 2 pcs
Spinach – ½ cup
Onion finely chopped – 1 medium sized
Boiled Sweet corn – 1tbsp
Low fat diced paneer – 1 tbsp
Butter – 1 tsp
Garlic clove freshly grated – 1 clove
Pesto Sauce – ½ tbsp
Hung Curd – 2 tbsp
Grated cheese – 2 tbsp
Grated Paneer – 2 tbsp
Salt and pepper – as per taste

Ingredients for Pesto Sauce :
Basil Leaves – 1 cup
Green Chilies – 1-2 as per preferred spicy
Lemon Juice – ½ tsp
Salt – as per taste
Garlic – 1 clove freshly grated

Pesto Sauce Method :
Mix all the ingredients into the mixer. Please do not add water. Blend it into a nice bright green paste.

Accomplishment Ingredients :
Cabbage (Red and green) finely grated – 1 tbsp
Sweet corn kernels (Boiled) – 1 tsp
Spring Onion – for garnishing
Red Bell Pepper Juliens – 1 tsp

Method :
Preheat oven at 200 C. Wash the potatoes and wipe them with a clean cloth. Pierce them with a fork. Grease the palm with oil and rub on the potatoes. Place them on a baking tray and sprinkle some salt. Pop the tray in the oven and bake for 1 hour or until properly cooked.

Once potatoes are baking in the oven, meanwhile prepare the creamy pesto veggies.

In a nonstick pan heat the butter on a low flame. Once warm add garlic and onions and sauté till onions becomes translucent. Add chopped spinach, boiled sweet corn and diced paneer cubes. Add black pepper. Don’t add salt. Let it cool down to room temperature. Then add hunged curd and pesto sauce. Mix all together and taste it before adding salt.

Take the baked potato and make a vertical slit. Open into half and season with pepper. Pour the mixture in between and add the grated cheese and paneer mixture. Bake till the cheese melts and serve it with salad.

A medium sized (approx5 oz) baked potato is just 110 cal. It’s completely free from cholesterol and sodium. Potatoes are rich source of Vitamin B6. Potatoes are also a good source of Potassium, copper, manganese, phosphorus, niacin and pantothenic acid. Potatoes contains variety of phyto-nutrients and other health promoting compounds. For this reason they may be useful as a part of a weight-loss diet and help lower blood pressure.

It becomes unhealthy when it combines with fats and heated at high temperatures. Because acrylamide is formed and that is the master blaster culprit of making potato unhealthy.
