Cauliflower, Broccoli and Peas
Good source of Potassium, Phosphorus, Carotene, Amino acids and soluble dietary fibers. Pea are rich sources of Plant Protein, Phosphorus, Zinc, Niacin (Vitamin B3), Vitamin K. In fact Vitamin K content of Peas is greater than pinto beans, broccoli, onion and potato. Vitamin K is essential for injuries – blood clotting, and calcium absorption in blood thereby enhancing bone health. Consumption of peas in diet is found to maintain blood sugar level due to amylose starch found in peas which helps in lesser absorption of sugar in blood. Therefore for diabetic people it is advisable to increase use of peas in their diet. As during winters Vitamin D is difficult to obtain consuming mushroom is a way to suffice the deficiency.
